Howzat! For a Summer Profit Opportunity

Licensees have an opportunity to score this summer by cooking up a cricket-themed menu to celebrate the eagerly-awaited Test battle between England and India.

The occasion provides the perfect background for the introduction of an ethnic-inspired menu – including sharing platters – to cater for the needs of hungry cricket fans watching the action in pubs nationwide.

Jonathan Ashmore, Commercial Director at The Big Kitchen, says: “It promises to be a great summer of sport for cricket lovers – and licensees can certainly profit from this and the burgeoning popularity of ethnic cuisine. This is a seasonal opportunity for them to create a menu that will appeal to cricket fans during the games, attract more people to the pub and encourage them to eat while watching the matches.”

In its 2010 report, ‘How Britain Eats’, industry analyst Allegra Strategies suggested that, with increasing frequency, consumers are looking for more adventurous dining, the sort of meals they can’t replicate at home – making ethnic food, with its premium price positioning a fantastic addition to menus.

The casual dining market has also experienced growth, with customers wanting a more relaxed, social dining experience. Share platters are especially ideal for watching sports and offer consumers value for money; they can also be incremental to driving drinks sales, encouraging customers to stay and enjoy that extra pint.

Jonathan continues: “The rise of ethnic food and the concept of casual dining are perfect bedfellows for pubs and bars. Licensees should take this opportunity to maximise their sales opportunities by creating an ethnic style pub menu that marks the involvement of a team from the sub-continent while also celebrating the fun of a great sporting occasion in culinary style.”

Pre-cooked and perfect for sharing platters, The Big Kitchen’s ethnic range includes a new Lamb Kofta made from quality lamb seasoned with mint and garlic and an authentic Satay Selection that combines quality chicken, marinated in authentic herbs and spices. Caterers can choose from Tikka, Bali and Sweet Chilli, as well as a vegetable version of the satay, which combines sweetcorn, carrots, peas and red peppers bound together with a delicate mix of herbs and spices including fragrant turmeric, cumin, ginger, chili and paprika.

Time to Gear Up for Summer Barbecue Challenge - The Big Kitchen

 The barbecue season is a huge opportunity for caterers – but it can be undermined unless caterers tackle the food safety challenges it serves up, The Big Kitchen is warning.

The company is echoing the views of the Foods Standards Agency (FSA) which says that food poisoning cases double during the summer months with one of the primary causes being barbecues that serve up raw and undercooked meat.

Jonathan Ashmore, Commercial Director, The Big Kitchen, says:  “Everybody loves a barbecue and it is a fantastic business opportunity for the foodservice industry - but there is a downside for caterers because barbecues also represent a major challenge in terms of food safety.

The fact is cooking has to be done away from the sterile and controlled kitchen environment which presents a problem particularly during the hot weather when raw meat is open to the elements. Another issue is that it is difficult for staff to cook consistently as the heat and temperature of a barbecue flame can vary remarkably during a trading session.”

Popular barbecue foods such as sausages can be difficult enough to cook at the best of times on a standard cooker but preparing them on a barbecue is even more challenging. Another factor adding to the pressures facing caterers is that customers are used to fast delivery times and so expect their food to be served up very quickly. This cannot always be achieved on a busy barbecue especially with raw meat.

“Given all these challenges, we believe there is an opportunity for some caterers to consider switching to pre-cooked meat products which will alleviate food safety issues at a stroke. They guarantee that the barbecue occasion is memorable for all the right reasons – and not because somebody goes down with food poisoning!    

This approach also allows caterers to reduce preparation times, as the products need just a few minutes to be heated, while guaranteeing a consistent result for customers. Another major benefit of using pre-cooked items is that it makes food preparation much simpler and can speed up the level of service. This has advantages for caterers in terms of the number of staff needed and their level of skills which can ultimately help reduce costs.”
